They probably should lock me away. Because I have a serious addiction to ice cream. My desserts ever since I can remember, from the time I was a little kid, always consisted of some sort of ice cream. Sundaes with hot fudge and heath bar were always a classic. On the boardwalk, I dreamed about the vanilla and orange sherbet twist cones covered in rainbow sprinkles I have ordered ever since I was 5. Even pie, what I can honestly say is my FAVORITE dessert, was not complete without the big scoop of vanilla ice cream. Ice cream was bae. That is, until I was 17, when my doctor declared my digestion problems to be partially due to lactose intolerance. I was devastated. So much so that I plunged my face into a pint of Cherry Garcia

There's something about tomato season that gets me every time. I can't get enough of those little guys. Or ways to use them in recipes. Maybe it is the memories of tomatoes from my childhood. I used to dance for twelve hours a week when I was in primary and secondary school. At the beginning of every June, my grandfather would come to watch our final recital. Driving up in his old red Toyota Corolla, he would always come with the season's tomato plants. He brought many different kinds with him, but my favorites were always the Sweet 1000s. Tomatoes you could just pop into your mouth like candy. I always craved simple tomato salads with basil, red onion and a light balsamic vinaigrette with those bright red beauties. Once I got to college, I realized I was INCREDIBLY spoiled with tomatoes at home.

Actually, to be completely honest, this is the second time I started a blog. When I started my first blog (titled the same name mind you. I love puns so it did not get old) I had no idea that I did not have to take myself all that seriously. I was shooting photos on my DSLR, editing them extensively, and often collapsing from exhaustion. I thought that there was no was no way I could maintain a blog with the academic pressures of school and social commitments. Thankfully, for you and for me, I realize that the goal of blog writing is not to assure you have 29428395829 posts (exact counts, people) a week, each with a radically new recipe idea. Also, more thankfully for you than for me, I graduated college in May and have a lot of free time on my hands. This is to inspire you to cook healthy, delicious, plant based and simple meals with flavors you might not always expect. This is, if you think about it, a behind the scenes of the Instagram. You get to learn all of my secrets. So let's get started. |
