Simple meals and throwbacks are the name of the game today. I am a very lucky girl that I can come home for lunch almost every day now that I am working. One of my favorite lunches is scrambled eggs so, now, in theory, I can eat them for lunch EVERYDAY! Side note: I should do that more often. When I was in college, I was a meal prep FIEND, I tell you. I would pack all of my lunches for Monday-Thursday in Tupperware containers and just be able to grab and go. This was essential when I would have class for six hours every day. Can we just take a step back and appreciate how cruel that was? Going from class to class to class without a break in between? I was also a snacking FIEND as well. My friends always knew who to come to when they were in need of a nosh. One time, when I won a trivia contest, I selected a Costco sized box of KIND bars as a prize. I ate so many I began to sweat dark chocolate and sea salt. Believe it. The problem with eating lunch almost every day out of a Tupperware are that most of my lunches ended up, out of convenience, being salads. Now don't get me wrong: I LOVE a good salad. Nothing beats a medley of grains, greens, and beans. However, like all things, sometimes too much of a good thing is not necessarily a GOOD thing. Like ice cream (when you're lactose intolerant) Or glitter. Actually wait I take that back about the glitter. Luckily for you, I have a repertoire of salads that I loved to make in college and snack on. Normally, these salads only had one qualifications: they had to be able to sit in the Tupperware WITH the dressing on them and not end up totally disgusting. You know what I'm talking about, yes? Because soggy lettuce never looks good on anything or anyone. And even though we are into December so it is not TECHNICALLY fall anymore, I feel like this one is too good not to share the recipe. It is a rift on tabbouleh, but since tomatoes right now are sad, we throw in all of the flavors of fall. i don't know about you, but any recipe that has brussels, winter squash, and pommies on it makes me jump up and down with happiness. This salad might just make you forget that you're eating a salad. Because roasted butternut squash is basically code for orange candy. I might be weird, but I actually pop it like popcorn as it comes out of the oven. Totally worth the burnt roof of my mouth for sure. Fall TabboulehServes 2
