Before boys, Valentine's Day used to be my favorite school holiday. Actually any holiday with copious amounts of sugar is MY kind of holiday. Because please, what would halloween be without candy? What would the 4th of July be without pie? All of the holidays we hold near and dear to our hearts are the ones where we have a "love knows no bounds" approach to sugar. Which is why I eat 3 slices of pie on Thanksgiving (duh) But I digress. Valentine's Day was one of those holidays where arts and crafts were VERY MUCH encouraged. The day before Valentine's Day, I remember getting really excited making a mailbox every year to receive all of those cute little cards everyone got for each other. Remember those? I would cover my box with practically everything we had in our craft box as kids. Pipe cleaners, buttons, oh and the GLITTER. I specifically remember at one point getting glitter EVERYWHERE. Somethings never change, right? I also remember going to the local drugstore to pick up some of those premade valentine's day cards. For me, picking out the perfect cards were serious business. I would always go for the ones with cute animals on them, but I remember, when I went to CVS, I was SO picky about picking the perfect cards. And then when I got home, i would only make sure my friends got the best cards. I was such an evil kid. Now, Valentine's Day is one of those holidays that everyone, single or not, has such anxiety over. Honestly, the whole day would be so much better if we all just carried around those adorable mailboxes. And passed out chocolates. And give hugs. Anxiety eliminated. But if you REALLY are looking to impress someone this Valentine's Day (or any day people!) I highly recommend this beaut of a pasta dish. Risotto to me screams date food, but is so intimidating to many (hello have you SEEN Top Chef? Risotto = Failure). However, by making pasta with risotto, you get all the cheesy, creamy perks without standing at the stove for forever. Of course in a bowl and two glasses of wine. Sounds like my kind of meal, right?
