Well, long story short, I am throwing together two of my most FAVORITE things in the entire world: Greek yogurt and popcorn. I know I know, I have done this before with my popcorn granola recipe. However, this, you guys, ACTUALLY marries my two loves in the best way possible. I mean, if married means permanently attaching them together in a frozen environment, then yes, by all means they are married. Y'all know I am a constant snacker. I swear, last night, I was testing a muffin recipe and I, no joke, ate three muffins. I sometimes feel as though I am constantly eating. It's actually kind of funny, except for the fact I am always buying food. I am the WORST when it comes to melon. Cantaloupe and watermelon are my vices. I am known to pound an entire watermelon in one sitting. And no, we're not talking about those personal watermelons. I personally do not understand those (although they are ADORABLE). You might say I am a watermelon heavyweight. Anyways, this snack is BOMB. I am known to also have a frozen fruit snacking habit. I love freezing any of my fruit that is on its last legs and then picking at the pieces. Therefore, this snack is the somewhat more indulgent version of that. I say somewhat because it is actually quite healthy. Healthy enough that I even wouldn't feel bad eating these while I'm running out the door for breakfast. I mean, I am a slave to the sweet breakfast. This is a case and point. Anyways, this would be the perfect recipe to add to your meal planning this week. It takes no time to prepare and you don't even have to pump up your oven. Summer may be over, but I still am looking for any excuse for a meal that does not force me to turn on my oven. Your Thursday self will thank you when you're tired and you need a treat. Trust me, the Thursday self does not look pretty and is in desperate need some treats. Feel free to top this baby with whatever you want! I personally think fresh fruit would be delicious on here. However, DO NOT forget the popcorn. It creates this salty sweet crunch factor that I am 100% obsessed with. Plus, the kernels of Pipcorn make the perfect size for snacking. meanderings: Line a baking sheet with parchment paper (or a piece of aluminum foil sprayed with coconut/canola oil if you're in a pinch). Spread skyr in an even layer over the parchment paper. Sprinkle kettle corn, granola, chocolate, and cinnamon on top of the skyr (it will not get soggy, I promise!) Place baking sheet flat in the freezer. Freeze for approximately 2 hours. These will immediately soften if you take it out of the freezer, so work quickly to smash it into pieces. Store pieces in a sealed container in the freezer. EAT. An adorable and delicious snack? 100% down.
