Happy March my loves! We are just twenty days away from the start of spring, and well… I could not be more excited! Bring on the longer days (daylight savings starts Sunday March 13!), flowers (love) and warmer temps (love equally!). Speaking of daylight savings time, I'm pretty much the only person I know who actually looks forward to losing an hour of sleep. But there's something about not walking home in the dark after work that brings me such happiness. I am convinced that seasonal effective disorder is a real thing and something about more sun and being outside puts me in such a better mood. Also, probably because, as an Instagrammer, I am a slave to the light. A willing slave. So as we get closer to spring, I have to tell y'all that I am also excited for EASTER. And although I am Jewish and do not necessarily celebrate the religious part, I think we can all get behind another holiday of chocolate goodness. My mama was the queen of Easter baskets. Actually, she was the queen of any type of basket with any type of chocolately product. Those ridiculously delicious Reese's Peanut Butter Cups eggs, assorted soda flavored Jelly Belly's (the grape crush is the BEST), and only YELLOW peeps. Oh and of course, chocolate covered gummy bears. I have an honest confession, dear friends, that I have a serious addiction to chocolate covered gummy bears. Even when I was obsessed with clean eating, I still made exceptions to these little guys. People might hate 'em but haters gonna hate. Also, I'm so excited for neon to make a COMEBACK! I've always been a sucker for bright colors and, by the time winter ends, I'm always ready to break out my highlighter yellow everything. If I could be a color, it would most definitely be highlighter yellow. Electric, energetic, slightly off. Oh yeah, now we're talking. So it comes as no surprise that in the month of neon and spring, I bring you this sunny and bright (seriously that color?!) breakfast to help you move you through winter's last stand (please pray there is not a blizzard). Whipped ricotta has seriously become an addiction. I bought a 32 ounce container of ricotta cheese (on sale! That's right always looking for them deals!) and I have found every which way to use it. This whipped ricotta tastes very close to cream cheese icing (aka a healthy excuse to eat dessert) and therefore pairs perfectly with the wonder and deliciousness that is carrot cake flavored oatmeal. Any excuse to eat dessert, right? Raisins, pecans and coconut make the flavor come alive. Oh and especially the orange zest. DO NOT, I repeat, do not forget the orange zest. Probably the best part of this whole thing. Plus it's got carrot (duh), so you can def justify this for a breakfast with your favorite Easter bunny. This looks and sounds divine! My boyfriend loves carrot cake, so I fully intend on whipping this up for the both of us this weekend!
