So we have a freaking winner right here! It has been an exhausting couple of weeks around here in DC. I am (unsuccessfully) trying to plan my Halloween costume. I was never entirely good at Halloween, but I love the idea of thinking out a costume and going to get free candy. I know that sounds weird, "not being good at Halloween." It is always so stressful for me to come to a decision about a costume. And then once I do, I USUALLY find something else I like better

Well, long story short, I am throwing together two of my most FAVORITE things in the entire world: Greek yogurt and popcorn. I know I know, I have done this before with my popcorn granola recipe. However, this, you guys, ACTUALLY marries my two loves in the best way possible.
I mean, if married means permanently attaching them together in a frozen environment, then yes, by all means they are married. Have you honestly ever seen such a pretty salad? It is safe to say that, even as a small child, I was obsessed with color. I know black is that color that is supposed to make you feel sleek and confident (or is that white?). I don't know, but what I can tell you is, even now, the more neon the better. Even now, I will put a splash of neon on everything. That highlighter yellow color that many describe as "putrid"? Yup that is my favorite. I swear, I cannot resist buying anything that color.
But y'all already knew that. The title of this recipe is totally misleading. Honestly, you could eat these toastadas any time of day. Actually I prefer to have stuff with fried eggs on it for lunch. Since starting a new job and whatnot, I have been trying to figure out what types of lunches I can bring with me that will actually hold up for a couple of hours in the fridge. I was totally spoiled in my last job because I was able to go home and make lunch.
