Trying to eat healthy during the holidays is a laughable idea. But fear not! I know that I have personally struggled with eating healthy when christmas cookies are sitting right in front of you. I am powerless, dear friends, around cookies. Especially in they have oats in them. And are slightly chewy with crispy edges. I swear I'm not picky when it comes to cookies. There is just something about the perfect oatmeal cookies that makes me go weak in the knees.In fact, I JUST tried the Talenti gelato oatmeal raisin cookie. I know there are some pretty heavy opinions about oatmeal raisin cookies but one bite of this flavor and I melted. You might even think from this oatmeal cookies are my on again off again boyfriend. And in many ways you might be right. Also another thing I am powerless around: peppermint bark. Guys dark chocolate and peppermint is my most favorite combination. Nothing reminds me of the holiday season more than mint and chocolate. My aunt used to bring us a bag of peppermint bark squares every year and I swear that, after a day, I would have no idea where they would go. Holiday treats beat every other thing I can think of. So it comes as no surprise that, during this time of boundless temptation, you need an old friend of a salad that you can fall back on. The problem with salads this time of year is you need the ingredients to stick with you. There is nothing worse than eating a green salad only to find yourself hungry after shoveling snow for four hours.Yes this actually has happened. This is why I live in an apartment, where it is no longer necessary to shovel snow ;). Stick to your ribs is the name of the game here. This salad is the perfect thing to keep you full and keep you focused. Roasted cauliflower and lentils are tossed with a creamy dreamy tahini dressing. Honestly, this salad makes me pretend I am in the mediterranean. Which is totally fine by me because it is FREEZING at home right now. So won't you take a little staycation with me? .
